Cronaca di una creazione di pasta madre.
E dunque, quel 19 gennaio, presa da raptus creatore, mi sono messa a impastare, decisa ad intraprendere la carriera della panificatrice e fare il salto di qualità abbandonando quel panetto di lievito di birra, che sì, tanto mi rassicurava nel frigo, in un attimo si sa impasti e via, pizza a volontà, panini e focaccine varie, ma quell’industrialotto non mi convinceva affatto, lievitazione spinta e poi giù a bere come cammelli…e poi non so voi, ma quei cubetti non c’è verso di trovarli negli scaffali del supermercato, una specie di caccia al tesoro ogni volta! Ora volevo un lievito madre tutto per me!
E mentre i 100 gr di acqua, 200 gr di farina e il cucchiaino di malto si trasformavano in una palla omogenea e liscia, un senso di serenità mi pervadeva e il passo al battesimo è stato immediato: Serenella!
Messa a riposare in una ciotola coperta con pellicola, è stata monitorata come una specie aliena, un’incubatrice di vita, una sorta di brodo primordiale in versione compatta. Che ceppi batterici si staranno selezionando ora? A che punto sarà la fermentazione acetica? Farà la muffa? Questi e altri dubbi mi attanagliavano nell’attesa delle 48 ore, tempo necessario per scoperchiare la ciotola e verificare se la vita fosse in lei, mi sentivo praticamente una specie di dott. Frankenstein.
E all’alba della sera di due giorni dopo LEI si presentava così:

Ma torniamo ai bacilli che sono apparsi magicamente e gratifichiamoli subito con una bella cenetta a base di acqua e farina, sono dei tipi piuttosto frugali ed è facile farli contenti. Questa è la procedura da memorizzare per tenere in vita poi la pasta madre dopo che sarà pronta, si chiama RINFRESCO:
200 gr dell’impasto fermentato, sciolti amorevolmente in 100 di accadueo tiepida e poi rimpastati in 200 gr di farina, e via formare una bella pallina liscia e omogenea da far fermentare al solito in una ciotola coperta con pellicola, ma dopo qualche rinfresco va benissimo canovaccio umido, per altre 48 ore.
E così ho fatto ogni 48 ore, fino a che dopo 1 mesetto circa di bolle, idromassaggi, e rinfreschi vari, mi sono sentita pronta, o meglio lo era lei, in pratica il suo volume raddoppiava in circa 3-4 ore fuori dal frigo e dunque secondo i manuali poteva PANIFICARE!

Ciao Anna Rosa, grazie. Con quello che avanza di solito preparo grissini o schiacciatine, dipende da quanto tempo ho. Non aggiungo acqua, ma se serve un po’ di farina, sale, olio e se vuoi semi di sesamo o aromi come origano o rosmarino. Cuocio in forno fino a doratura. Ottimo riciclo.
